The three a.m. shift

Ovens on at three, first loaves out at six thirty, doors open at seven: the morning in five steps.

The first baker arrives at three and lights the deck oven. It takes two hours to come up to heat, which is just long enough to shape the baguettes and egg-wash the milk bread.

By six the croissants are proving in a warm cabinet. The first sourdough comes out at six thirty, and the shop smells right by the time the doors open at seven.
